Learn to ferment vegetables in a saltwater brine, an environment in which healthy probiotics can flourish, to create tasty, tangy sauerkraut and kosher dill pickles. Culinary instructor and cookbook author, Emily Paster, will explain the how and why of lacto-fermentation, including the necessary salt-to-water ratio, the proper fermenting environment and how to avoid common mistakes.
